Apple Cider Donuts

One of Mrs. Wink's favorite things to enjoy in the fall are Apple Cider Doughnuts. Since we can't have real doughnuts here in the Wink house (the whole Celiac game), Mrs. Wink wanted to create some Wink-friendly Apple Cider dough-free donuts! 

Check out the recipe below. 

Ingredients:

  • 2 cups gluten free flour blend
  • 1/4 cup coconut sugar, plus extra
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • Sprinkle cinnamon, plus extra
  • Sprinkle allspice
  • Freshly ground nutmeg
  • Freshly ground cloves
  • 1 cup apple cider
  • 1/3 cup almond (or your favorite non-dairy) milk
  • 1/4 cup coconut oil

Directions:

  • Preheat oven to 350F
  • Combine the flour, coconut sugar, baking powder & soda, salt, cinnamon, allspice, nutmeg and cloves in a large bowl
  • In a saucepan over low heat, combine the apple cider, almond milk and coconut oil. This is to prevent the coconut oil from firming up when added to the cold cider and milk 
  • Once combined and warm, add to the dry ingredients and mix very well
  • Carefully pour batter into a piping bag, or in our case, a ziplock bag with a corner cut out
  • Pipe batter into greased donut pan, and bake for 15-20 minutes
  • Remove and let cool slightly, then toss with cinnamon and sugar mixture
  • Serve with 1 scoop each of Vanilla Bean and Cinnamon Bun Wink, plus some apples for garnish. Enjoy!
