Chickpea Blondies a la Mode

Last time on the blog, we brought you some delightful brownies a la mode made with ... wait for it ... black beans! We simply HAD to balance those out with blondies a la mode made from... wait for it.. CHICKPEAS! They were a huge hit in the office. Everyone marveled at using beans instead of flour as the basis of desserts, but it makes for a much more nutritional treat with less of an impact on blood sugar.

Final verdict - amazing. Let's make them happen!!


  • 1 tablespoon ground flax seed
  • 3 tablespoons water
  • 1 15oz can chickpeas
  • 1/2 cup almond (or your favorite nut) butter
  • 1/3 cup of maple syrup
  • 2 teaspoons vanilla
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • Sprinkle sea salt


  • Preheat oven to 350F
  • Make the flax egg - mix the flax and water together and let sit for 5 minutes
  • Drain and rise the chickpeas very well
  • Add all ingredients, including the flax egg, into a food processor and mix well
  • Spray a baking pan with coconut oil spray
  • Pour the batter into the pan and pop into the oven for 25-30 minutes
  • Let cool, and serve with a scoop of Cocoa-dough Wink. Enjoy!
