Whoever said that morning is the most glorious time of the day was definitely referring to Morning Glory muffins. These little muffins pack a serious nutritional punch, incorporating carrot, apple, zucchini, and pecans into breakfast! This particular recipe is even more health-i-fied by using zero sugar (that's right, ZERO) and replacing regular flour with almond and coconut flours. 

These little guys come in at just 1.7 grams of sugar (!!) and a whopping 5.3 grams of fiber! 

These low carb Morning Glory muffins are such a great way to kick-start your metabolism, or to have as a snack throughout the day. Let us know if you give them a shot! 

Ingredients:

Wet:

  • 1 grated carrot
  • 1 grated granny smith apple
  • 1 grated zucchini
  • 1/4 cup pumpkin puree
  • 2 eggs
  • Splash of vanilla

Dry:

  • 3/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup shredded coconut
  • 1/3 cup chopped pecans
  • 1/3 cup raisins
  • 1 tablespoon chia seeds
  • 1/4 teaspoon Stevia
  • Dash cinnamon
  • Dash salt

Directions:

  • Preheat the oven to 350F
  • In a large bowl, mix together the wet ingredients
  • In a separate bowl, mix together the dry ingredients
  • Slowly add the dry to the wet, making sure to mix everything together very well
  • Add the mixture to a muffin pan, and bake away for 30-35 minutes. 
  • Enjoy with a scoop of Iced Latte Wink to complete your breakfast.
