Low-Carb Sugar-Free Lemon Cake

Is there any flavor that gives you more of a spring in your step than lemon? I don't think so. So versatile, one of my favorite ways to use lemon is in desserts. This low-carb and sugar-free lemon loaf cake is just what the doctor ordered. You can add more of a sweet flavor by topping the loaf with a powdered sugar and lemon juice glaze, but I like this refreshing treat just the way it is. Enjoy!! 

INGREDIENTS:

  • 2 &1/4 cup almond flour
  • 1/4 cup ground flaxseed meal
  • 1 tablespoon chia seeds
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 5 eggs
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • Zest from 1 whole lemon
  • 1/4 teaspoon stevia
  • 1 tablespoon apple cider vinegar

DIRECTIONS:

  • Preheat your oven to 350.
  • In a food processor, combine the almond flour, flaxseed meal, baking powder, baking soda, and salt, and pulse to combine very well
  • Then, add in the remaining ingredients except the chia seeds and blend to combine, about 1 minute
  • Finally, mix in the chia seeds
  • Spoon into a greased loaf pan and bake for 35 minutes
  • Top with a scoop of Cocoa-dough and enjoy!

Serving Size - 1 slice (1/10th of the loaf) plus 1 scoop Cocoa-dough!
