Sunday Prep: Homemade Almond Milk, Cookies and Bread

Out of all the days of the week, I would have to say that Sunday is my absolute favorite. I love the quiet of the day, I love the relaxation it brings. No need to rush around, do some crazy workout at the gym, or adhere to a strict schedule. 

We can sleep in, wake up refreshed, make a hearty waffle breakfast and bake all the bread.

Wait, what? Bread?

That's right! One of the reasons I adore Sundays is because I get to prepare nourishing, whole foods for our two-some family to be enjoyed throughout the week. So, what exactly happens on Sunday? 

Homemade Almond Milk

First, we soak the Almonds

I always make sure that I soak 1 cup of raw, whole almonds overnight on Saturday. That is, unless I do something crazy like have a third glass of pinot...yep, I'm a true lightweight.

Milk It.

In the morning, those almonds go right into my blender to be made into almond milk. So, what's a girl to do with that leftover almond pulp? 

Almond Bread

I use the remaining almond pulp with a few other ingredients and make a delicious almond bread that my gluten-and-dairy intolerant husband can enjoy throughout the week! It's very simple to make, the food processor does 90% of the work, and you're left with delicious, nutritious, fluffy bread.

Something Sweet

Another thing I love to do on Sundays is to make a healthy & sweet treat for myself and Gabe to enjoy all week. One of my personal favorites includes this chocolate-hazelnut spread (it is super delicious on the almond bread). I also like to make egg white cookies (even more delicious with the chocolate-hazelnut spread).

Good Snacking

To avoid any kind of unhealthy snacking throughout the week, I love making Peanut Butter Oat Balls that I gravitate towards any time hunger hits and I'm lazy.

For Extra Credit.... 

Most Sundays I'll make a big batch of lentils or beans that we can eat throughout the week for a lazy lunch/dinner. Throwing some kale, cucumber, lemon & olive oil over a big bowl of lentils is a great way to get amazing protein and fiber into lunch! 

This baking/cooking fest only takes a couple of hours total (including baking time) and sets us up for a healthy, productive week ahead!
